lemongrass chicken
put a new fresh taste into your everyday rice cooking!

ingredients:
4 or more chicken thighs
(skin on)
4 tbsp of lemongrass
2 tsp of butter or a nice olive oil (lower fat)

directions:
steep your lemongrass with boiling water for about 5 minutes. make yourself a nice cup of tea to get nice and calm.

pour the tea into a cup. you are going to keep it for drinking with the chicken later.

now bring out the chicken thighs, grab one side of the skin and pull it off the meat, but not right off. spread about a tbsp of the lemon grass onto each of the thighs nice and evenly. scoop a 1/2 tsp of butter on to each thigh and then fold the skin back over.

place the thighs in an oven safe dish or pan that can hold some juices from the chicken. put the chicken into a preheated oven (450?) for 50 minutes. this will give it that nice crispy skin.

it works really well served over the lemongrass rice with some steamed french green beans!
