homemade chai ice cream
spice up your dessert menu! it takes some time to make this delectable treat but it's worth it in the end.

ingredients:
2 tbsp indian mocha chai
4 tbsp sugar

pinch of salt
pinch of cinnamon
1 3/4 cup of half and half cream
2 large eggs, beaten
1 1/2 cups of whipping cream
1 tsp vanilla extract (or a vanilla bean)

directions:
combine sugar, salt, cinnamon, half and half cream and whipping cream in a heavy saucepan. cook over medium heat, stirring occasionally until the mixture is steaming. keep stirring, add the chai tea into the saucepan. while stirring leave the heat on low for about 5 minutes. take off the heat and cover for 10 minutes.

put the two eggs into a medium size mixing bowl and slightly beat the eggs. strain the cream mixture into the egg bowl slowly, ensuring that you don't get any of the tea leaves into the bowl. once you are done clean out the leaves and pour everything back into the saucepan. cook over medium to low heat until slightly thick, about 3 minutes. remove from the heat and refrigerate until chilled (even overnight).

when you are ready to freeze, stir in the vanilla bean or extract. start the ice cream maker, pour mixture in and anxiously await the best chai ice cream you will ever taste!

one of the cool things about making your own ice cream is that you can control the amount of sugar your kids are getting. feel free to adjust the amount of sugar to your taste.
